My name is Justin and I am the founder of Mojo Madness in Akron Ohio. Mojo Madness is a Cuban sandwich/street food truck concept that I came up with many years ago but never did anything with. Allow me to explain...

I am almost 40 years old and I started working in the restaurant industry when I was just 15 years old at a local fast-food joint in Texas where I'm originally from. I thought it was the coolest thing ever to have a job as a kid. No real bills to pay while gaining all the experience I could soak up. What I didn't know at the time was that my part time fry cook job was going to be the beginning of a lifelong obsession with food. Not just cooking it but creating an experience that brings people together. It was very powerful and still is today.

I decided early on in my life that I would treat my time working in kitchens as a training program. An opportunity to cook, to learn what works and what doesn't, to discover what separates successful restaurants and chefs from those who fail. I knew by the time I was 20 that I wanted to run my own business which would of course involve food yet still wasn't ready to take on my own restaurant. There was still so much to learn. Things like inventory, P&L, permits, accounting, marketing, ECT. I learned that having good food is not enough...

I decided at that time that I would leave my home in Texas and hit the road to find more opportunities to learn. I wanted to know everything there was to know about restaurants. I've been a dishwasher, a prep cook, a meat slicer, a bartender, a line cook, sous chef, executive chef, and even a General Manager. I've traveled, and pushed myself to soak up knowledge like a sponge soaks up water. 

Looking back at my time spent dedicated to this industry, I still believe there is always new things to learn. I discovered that BBQ in Texas is different from BBQ in the Carolinas. That poutine in Canada is different from that which you'd find anywhere else. 

I have no regrets in my experience up to this point. I remember having my 1st Cuban sandwich in Miami and I said....yep, this is it! This is what I want to do. You can find inspiration almost everywhere around you at all times, but you have to be open minded enough to see it when it's right in front of you.

Now my family and I live in Akron Ohio and the people here just don't realize what they are missing out on. That's what Mojo Madness is. It's a trip to Cuba in a single bite. It's culture, a celebration. It deserves to be treated with care, love and respect. Things I didn't understand back when I was only 15 but do now. 

My whole life has led me to where I am right now. It's Madness! But if it's Madness seasoned with limes, lemons, garlic and oranges then it's Mojo Madness. A Cuban street food style food truck right here in Akron Ohio. 

We are more than just a food truck. We are dedicated chefs, cooks, that believe in the process. We believe the details matter when it comes to creating a shared food experience. We are Mojo Madness, and we look forward to serving you!
